Ingredients

  • 5 g fresh yeast (for slow rising 1-2 grams are also fine)
  • 120 ml milk
  • 1 egg
  • 270 g all-purpose flour
  • 10 g lard (or butter)
  • Half teaspoon salt
  • 120 g salami (mixed cold cuts (salami, cooked ham, cured ham, mortadella) and diced cheeses)

Steps

  • Dissolve the yeast in milk or water and pour everything into the food processor.

  • Add the flour, salt, butter, and start the machine, add the egg and work, if you use a planetary mixer, a mixer with a hook, also add all the cold cuts and cheeses.

  • If you are using a blade robot like the Bimby, work the dough then add the cold cuts and cheeses and work by hand otherwise the blades will cut everything.

  • Take the dough, form a ball, and let it rise in a bowl covered with plastic wrap, the dough is elastic and soft.

  • Let it rise until it doubles, it rose for me in an hour and a half.

  • After rising, divide the dough into three parts, form thin sticks of about 1.5 inches, cut into pieces of one inch.

  • Take the pieces and work them with your hands to form balls, of course, you can also take the pieces directly from the dough, but I found it more convenient this way, your choice.

  • Place the balls on a baking sheet lined with parchment paper and let them rest for about twenty minutes.

  • Turn on the oven to 180°C (356°F) let it heat up, brush the little kisses with a mixture of yolk and milk and bake for about 15 minutes, they should color.

  • Do not overcook them otherwise they dry out, better to lower the temperature and extend the time if they do not seem done.
