Ingredients

  • 2.2 lbs all-purpose flour
  • 1 cube fresh brewer's yeast
  • 17 oz water
  • 3.5 oz lard (or oil)
  • 5.3 oz pork cracklings
  • 3.5 oz Neapolitan salami
  • 3.5 oz cooked ham
  • 3.5 oz prosciutto
  • 3.5 oz mortadella with pistachios
  • 5.3 oz provolone cheese (sweet)
  • 5.3 oz provolone cheese (spicy)
  • 3.5 oz pecorino cheese
  • 9 eggs
  • 1 egg yolk
  • to taste pepper

Steps

  • Boil all the eggs, cook them for 5 minutes after boiling then place them in a container with cold water and shell them.

  • Dissolve the brewer’s yeast in water, pour half of the water into the mixer bowl, add half of the flour and start kneading.

  • With the machine running, add the remaining flour and lard, knead until the dough detaches from the bowl, it should be firm, if necessary add more flour.

  • Set aside some dough for the strips that will cover 4 boiled eggs to be used as decoration.

  • Roll out the dough and fill it with the cold cuts, cheeses cut into pieces, and pork cracklings. If you prefer, also add 5 boiled eggs cut into pieces; in this version, I did not add them.

  • Roll it tightly and close into a ring shape, place the boiled eggs on top, securing them with dough crosses.

  • Let it rise covered in a bowl until it doubles in size, about 3-4 hours.

  • Preheat the oven to 356°F, bake and cook for about 40 minutes, always do the toothpick test to check the internal cooking, it should be dry.
