Delicious Neapolitan struffoli, one of the quintessential Christmas sweets, simple and quick to prepare and usually loved by both adults and children for their shape and the abundant honey that covers them.
The traditional recipe for Neapolitan struffoli includes lard and rum, I used butter, so lighter, they are very soft and it’s a perfect recipe for Neapolitan struffoli.
This is the grandma’s recipe we’ve been making for years, they’ve always been perfect, light and soft, my daughter loves them.

Ingredients
- 2 1/2 cups all-purpose flour
- 3 tbsps butter (or lard)
- 1 pinch baking soda
- 2 eggs
- 1 egg yolk
- 1 tbsp sugar
- Half lemon juice
- lemon zest
- 1/4 cup dry white wine
- 10 1/2 oz honey
- 3 tbsps sugar
- colored sprinkles
Steps
Pour the flour into a bowl, add the sugar, eggs, butter, and grated lemon zest.
Work for a bit then add the wine and lemon juice, if needed add more lemon juice.
Prepare a ball, wrap it with plastic wrap, and let it rest for 30 minutes.
The dough is soft like shortcrust pastry but not sticky, don’t add too much flour otherwise, the struffoli will become hard.
Then take the dough, divide it into smaller balls, make little logs, and cut them into many small pieces.
Fry in plenty of oil, the time for light browning, just a few seconds, drain them and place them on a plate with absorbent paper.
Then melt the honey in a small pan on the stove with the sugar.
Place the Neapolitan struffoli on the serving plate, sprinkle with honey and sprinkles and/or candied fruits.
