Ingredients
- 4 squid
- 7 oz black olives
- 0.7 oz salted capers
- chopped parsley
- bread
- 0.7 oz pine nuts
Steps
Clean the squid or have them cleaned at the fishmonger and cut the tentacles and wings into small pieces.
Soak 3 slices of bread, pit the olives and chop them into smaller pieces, chop some parsley and set aside.
Pour the oil into a pan, add the olives, capers and let them brown a bit, then also add the chopped squid and pine nuts.
Deglaze with a bit of wine, I didn’t use it, then add the bread and stir, if necessary add some water or oil and cook for a few minutes.
Once ready, stuff the squid and close with a toothpick.
Cut cherry tomatoes into wedges and place them in the pan with oil, if you prefer, add a clove of garlic.
Place the squid, add a handful of capers, I also added the pine nuts and cook with the lid closed, turning them for 30-40 minutes.
