Ingredients

  • 4 squid
  • 7 oz black olives
  • 0.7 oz salted capers
  • chopped parsley
  • bread
  • 0.7 oz pine nuts

Steps

  • Clean the squid or have them cleaned at the fishmonger and cut the tentacles and wings into small pieces.

  • Soak 3 slices of bread, pit the olives and chop them into smaller pieces, chop some parsley and set aside.

  • Pour the oil into a pan, add the olives, capers and let them brown a bit, then also add the chopped squid and pine nuts.

  • Deglaze with a bit of wine, I didn’t use it, then add the bread and stir, if necessary add some water or oil and cook for a few minutes.

  • Once ready, stuff the squid and close with a toothpick.

  • Cut cherry tomatoes into wedges and place them in the pan with oil, if you prefer, add a clove of garlic.

  • Place the squid, add a handful of capers, I also added the pine nuts and cook with the lid closed, turning them for 30-40 minutes.
