Preparation

• Sift the flour with the vanillin into a bowl, add the sugar, egg, and diced butter.

• Quickly knead, shape into a dough and refrigerate for at least 30 minutes.

• After the time has passed, take the dough from the fridge, divide it into two parts, roll one to a height of 1/8 inch.

• With the other half, make balls the size of a walnut, flatten them slightly and place them on the baking sheet.

• Place an almond in the center.

• Cut the rolled dough with a 2-inch cutter, you should obviously get the same number of cookies to pair them up.

• The rolled ones will be more, so you can re-knead the dough to form more round cookies to have more pairs.

• I used about half of the dough and made 7 cookies, you should be able to make 15-20.

• Bake the cookies at 350°F in a preheated convection oven for about 15 minutes, those lower ones should be removed earlier.

• The balls will bake for a few more minutes.

• When the cookies are cool, fill and pair them.
