Ingredients

  • 2 eggs
  • 10.5 oz red onions
  • 3 tablespoons all-purpose flour
  • 5.3 oz mozzarella cheese

Steps

  • Slice the onions and place them in a pot with 2 glasses of water and 1 glass of vinegar, white or red, as you prefer, and let them cook for a few minutes after boiling.

  • Drain the onions and set aside.

  • Beat the eggs with a fork then add the flour and continue to beat with the fork.

  • Add the onions, mozzarella cheese in pieces, salt and pepper if you prefer, mix well.

  • Oil a frying pan, heat it then pour the mixture and cook flipping for about 10 minutes in total.

I love onion omelette, to remove the bitterness just blanch them with water and vinegar for a few minutes, it can be enriched with other ingredients such as speck or diced bacon or grated Parmesan.
