Orange Bundt Cake with Cream and Chocolate

Ingredients

  • 6 eggs
  • 1.5 cups sugar
  • 4 cups all-purpose flour
  • 4 tbsps extra virgin olive oil
  • 0.25 cups orange juice
  • 1 cups milk
  • 1 packet baking powder
  • 2 orange zest (2 oranges)
  • 2 cups pastry cream
  • 1.75 oz chocolate

Steps

  • Prepare the pastry cream following THIS recipe pour it into a bowl, cover with cling film in contact and let it rest.

  • Beat the eggs with the sugar until doubled in volume, then add the flour a little at a time sifted with the baking powder, always working with electric whisks.

  • Alternate the flour with orange juice, oil, and milk, then add the grated zest and the chopped chocolate or chocolate chips if you prefer.

  • Mix the batter well, butter and flour a 9-inch bundt pan and pour in half of the batter.

  • Make a layer of pastry cream and pour in the rest of the batter.

  • Top with more chocolate then bake in a hot oven at 350°F for about 35-40 minutes.
