Light and tasty, the oven-baked cabbage meatballs are easy and fast, a light and very good vegetable dish, perfect both for lunch and dinner with few ingredients, also great for those who don’t like vegetables.

The recipe for oven-baked cabbage meatballs is very simple, just mix all ingredients in a bowl like traditional meatballs, I added soaked bread, and they were excellent, super soft, everyone liked them.

To make vegetable meatballs, you can use either raw or cooked vegetables; of course, once cooked, the meatballs will be softer.

Ingredients

  • 10.5 oz cabbage
  • 1 egg
  • 1.75 oz bread
  • 1 tablespoon grated Parmesan cheese
  • breadcrumbs
  • salt

Steps

  • Cut the cabbage into thin strips, then wash it well and cook in a small pan for 5-7 minutes.

  • Drain and let it cool, then squeeze it well to remove excess water.

  • In a bowl, combine the cooled and squeezed cabbage with the egg, grated cheese, soaked bread, salt, pepper, and spices of your choice, and mix well.

  • If the mixture is wet, add breadcrumbs or more Parmesan.

  • Shape the mixture into meatballs, coat them with breadcrumbs, and place them in the air fryer basket or oven, and oil them.

  • Cook at 356°F for 20-25 minutes, turning halfway, until golden; with the air fryer, cook for 10-12 minutes, turning them, or you can fry them in a pan.
