Paccheri with Sausage and Broccoli Rabe Neapolitan Recipe

PACCHERI WITH SAUSAGE and BROCCOLI RABE, a simple and tasty Neapolitan main dish with vegetables, a delicious recipe also great for dinner.

Usually, if we move from Campania, broccoli rabe is confused with broccolini or turnip greens, but it’s not the case. It’s the part of the just developed inflorescences of turnip greens.

They are cultivated on the hills of Vesuvius and have a bitter taste that characterizes them; only if you taste them here, you can understand them.

They are great for seasoning pasta but try them in a nice sandwich or on pizza; as they say in Naples, “te fann arrecreà” (they make you rejoice)

The recipe for paccheri with sausage and broccoli rabe is very simple and also very good; keep in mind that during cooking, the vegetable “wilts” and reduces in volume.

Follow me in the kitchen today; we have paccheri with sausage and broccoli rabe!

Paccheri sausage and friarielli Neapolitan recipe
  • Difficulty: Very Easy
  • Cost: Very Cheap
  • Preparation time: 15 Minutes
  • Portions: 4
  • Cooking methods: Stovetop
  • Cuisine: Italian

Ingredients

  • 1.5 lbs broccoli rabe
  • 4 sausages
  • chili pepper
  • garlic
  • 18 oz pasta (paccheri)

Preparation

  • Wash the broccoli rabe thoroughly, remove the woody stems, and use only the leaves.

  • Brown a clove of garlic, then remove it and put the vegetable in the pan.

  • Add a bit of water and let it cook with the lid closed.

  • Check from time to time until they wilt.

  • This way, the vegetable will be sautéed, but it’s good for this; otherwise, leave the lid on and add water from time to time.

  • Cut the sausages in half or into pieces.

  • When the vegetable is cooked, move it to one side of the pan and put the sausages in.

  • Put the water for the pasta, and when it boils, add it.

  • Always be careful not to burn the vegetables because they become even more bitter.

  • Of course, you can cook the sausages separately, but they taste better this way.

  • Season with chili pepper and mix everything well.

  • Drain the pasta, but add a spoonful of water to the pan with the sauce.

  • Add the pasta and leave it on the heat while you season it.

    Bon appétit
