Ingredients

  • 1 3/4 cups all-purpose flour
  • 2 eggs
  • 2/3 cup water
  • 3.5 oz bacon
  • 2.5 oz fiordilatte mozzarella
  • 1 tsp salt
  • Half packet instant leavening agent for savory preparations
  • 1 tbsp extra virgin olive oil
  • 5.3 oz zucchini

Preparation

  • Pour the eggs with the oil and water into a bowl then mix with a spoon.

  • Grate the zucchini with a large-hole grater and add to the liquids, mix well.

  • Add the salt, mix, then add the sifted flour with the leavening agent, mix little by little then add the bacon and cheese in pieces.

  • Oil a pan and pour the mixture, cook with a closed lid for about ten minutes then turn the flatbread and cook the other side.

  • Finish cooking for another 10 minutes and drain on absorbent paper.
