Ingredients
- 4 cups All-purpose flour
- 1 pinch Baking soda
- 5 tbsp Lard (or extra virgin olive oil)
- 1 cup Milk
- 2 tsp Salt
- 2 Eggplants
- 17 oz Canned cherry tomatoes
- 5 oz Provola (or mozzarella)
- Basil
- Oregano
Preparation
Pour the flour into a bowl, add the baking soda and mix.
Add the oil and water gradually while you start kneading.
Add the salt and all the flour then move to the work surface.
Work the dough a little, it should be smooth and not sticky.
Make a ball and divide it into 4 pieces, cover and prepare the topping.
Wash the eggplants and cut them into slices then into pieces, place oil in a pan and add the cherry tomatoes with the eggplants, salt to taste.
Cook over medium heat for 5 minutes, then reduce the heat, sprinkle with oregano and cook for another 5 minutes or so, the eggplants should soften.
Roll out the dough balls, heat a greased pan and cook one side for a few minutes then flip and top with the eggplants.
Meanwhile the piadizza cooks below, cut the provola and add it to the eggplants, cover with the lid and cook for a few minutes.
Garnish with basil leaves and serve.
