- 1 Egg
- 10 Speck (slices)
- 9 oz Stracchino cheese
- 3.5 oz Fiordilatte cheese
- 1 cup Milk
- 2 tbsps All-purpose flour
- 2 tbsps Butter
- 1 pinch Nutmeg
- 1 pinch Salt
Preparation
Prepare the béchamel sauce, put the milk in a saucepan with the butter, salt, and nutmeg, mix with a whisk, when the butter is melted add the flour.
Continue to mix with the whisk to avoid lumps, turn off the heat and set aside.
In a bowl, add the milk, egg, a pinch of salt, and oil, mix with a whisk then add the flour and mix well.
Heat a slightly oiled non-stick pan and pour a ladle of batter to form the pancakes, cook on both sides, be careful not to over-dry them.
