PANDORO COFFEE ROLLS, easy and quick with eggless mascarpone cream, simple and delicious idea ready in 10 minutes.
Super delicious Pandoro coffee rolls, are prepared in no time and are perfect to serve after lunch or dinner, obviously for the entire Christmas period.
You can also prepare them in advance and freeze, they are a pleasure to eat one after the other, these Pandoro coffee rolls are really so delicious and will surely please your guests too.
Of course, you can fill them as you prefer, I didn’t have much time so I prepared a simple mascarpone and soluble coffee cream, in less than 5 minutes, I filled the slices of cake.
Those who don’t prefer pandoro can easily use panettone or vary the cream with Nutella for example, or custard or other creams that you can find HERE.

Ingredients
- 1 slice pandoro
- 1/2 cup oz mascarpone
- 1/2 tablespoon instant coffee (or moka)
- 1/8 cup oz sugar
Steps
Cut a slice of pandoro in half lengthwise and flatten it a bit with the rolling pin.
Overlap the slices and press them together to attach them to each other.
Work the mascarpone with the sugar and instant coffee or moka using electric whisks.
Spread the cream on the slices and roll them up well, cut into rolls and place them on a plate.
Refrigerate until ready to serve with a sprinkle of powdered sugar or cocoa.
