Ingredients
- 1 1/4 cups almond milk
- 3/4 cup fresh liquid cream (or sweetened whipped cream)
- 2.8 oz sugar
- 1.6 oz gelatin powder (or 0.35 oz in sheets)
- 1/2 packet vanillin
- 2.8 oz berries
- to taste jam (berry or strawberry (optional))
Steps
For the recipe, you can use either gelatin sheets or powder as I did, and either fresh liquid cream by adding sugar or the already sweetened one.
Then pour the milk, cream, and sugar into a saucepan and bring to a boil.
Remove from the stovetop, add the vanillin and gelatin, stir for a while then return to the stovetop and continue stirring until the gelatin is well dissolved.
Remove from the stovetop and pour the mixture into single molds or a 20 cm glass or silicone baking dish or any metal baking dish but lined with cling film.
Place in the fridge to set for 2 to 3 hours.
Prepare the fruit syrup, put them in a small pot with 2 tablespoons of sugar and 2 tablespoons of water, cook over low heat until the syrup forms, then blend with an immersion blender and place in the freezer for 10 minutes.
When the panna cotta has set, remove it from the fridge and divide into portions, I used a 7 cm ring mold.
Add a bit of jam to the syrup if you prefer, and pour it over the semifreddo, garnish with berries and if in season add mint leaves or chocolate shavings.
