Ingredients
- 4 cups all-purpose flour
- 1 1/6 cups water
- Half cube fresh brewer's yeast
- 3 tbsps extra virgin olive oil
- 2 tsps salt
- 3 zucchini
- 7 oz salami
- 10 1/2 oz provolone
Steps
Dissolve the yeast with 200 ml of water and pour it into the mixer, add the flour, salt, and oil, start the machine and add more water.
The dough should be soft, slightly sticky, make a ball and let it rest until doubled in a bowl covered with plastic wrap, about 2-3 hours.
Slice the zucchini, place them on the baking sheet, oil them, and cook with the grill already hot for about 5 minutes or with the air fryer at 392°F for about 5-7 minutes.
After rising, divide the dough into 4 pieces, roll out with a rolling pin but without pressing too much, form long and oval rolls like saltimbocca.
Brush with oil and oregano and let rise for 20 minutes.
Bake in the hot oven at 356°F for about 20 minutes then remove, cut them in half and fill with zucchini, provolone, and slices of salami, put back in the oven for a few minutes.
