Ingredients

  • 7 oz butter
  • 1 1/4 cups powdered sugar
  • 4 eggs
  • 1 cup all-purpose flour (the one you usually use)
  • 3/4 cup potato starch
  • 1/3 cup orange juice
  • orange zest (from 2 oranges)
  • 1 packet baking powder
  • 1 pinch salt

Steps

  • Cream the butter with the powdered sugar for 8–10 minutes, until it is very pale and fluffy (key step for the “paradise” effect).

  • Add the eggs one at a time, continuing to beat, then add the grated zest and orange juice.

  • Sift together flour, potato starch, baking powder, and salt and gently fold them in with a spatula or at low speed.

  • Pour the batter into a 9-inch well-greased and floured pan, bake in a static oven at 340°F for 45–50 minutes.

  • Let it cool completely and dust with powdered sugar.

Useful tips: use untreated oranges because the zest matters greatly; cream the butter and sugar well for a tall and light paradise cake; do not open the oven in the first 30 minutes, or you’ll lose the softness; a dusting of powdered sugar only when it’s cool, so it stays nice even the next day.

If you want an even more intense aroma: replace 20 ml of juice with orange liqueur (like Cointreau).
For an extra-soft cake: use large eggs and don’t open the oven in the first 35 minutes.
