I needed a soft, quick dessert that would bake in an instant. And these were born: the PARADISO mini cakes with cream baked in 7 minutes. Super soft, light, with that melt-in-the-mouth texture that immediately gives a “wow” effect.

Ingredients

  • 2 eggs
  • 3/4 cup + 1 tbsp cup all-purpose flour (the one you usually use)
  • 1/4 cup + 1 tbsp cup granulated sugar
  • pinch salt
  • 1 teaspoon baking powder (optional)
  • 3 tbsp unsweetened cocoa powder
  • 1 cup + 2 tbsp cup heavy cream (whipping cream)
  • 1/3 cup cup sweetened condensed milk
  • 1 tbsp honey

Steps

  • Prepare the cream: whip the cream with electric beaters until firm, add the honey and the condensed milk and work with the electric whisk until you obtain a velvety, glossy cream. Keep chilled in the refrigerator.

  • Beat the yolks with the sugar until you obtain a frothy mixture, beat the egg whites with a pinch of salt then gently fold the two mixtures together from bottom to top with a spatula.

  • Add the sifted flour with the cocoa in two additions, and the baking powder if you use it. Fold by hand with a spatula then spread the batter onto a baking sheet lined with parchment paper.

  • Bake in a preheated oven at 392°F for 7 minutes, remove from oven and let cool.

  • Remove the sponge cake from the parchment and cut it into squares of 2 3/4 in or 2 in, as you prefer, and fill half of them with the cream using a pastry bag.

  • Sandwich them together and dust with powdered sugar, keep refrigerated until serving.
