PARMESAN and WALNUT TARALLI, crunchy, fragrant, and irresistible: a perfect salty snack for an aperitif or to accompany a glass of wine during the holidays. You prepare them quickly, with few ingredients and without a mixer, and they always disappear in a flash!
I must admit: every year at Christmas I promise myself not to overdo it with appetizers… and promptly end up making these taralli as well. But how can you resist parmesan taralli, crumbly and tasty, with that crunchy touch of chopped walnuts? They are perfect for nibbling at any time, even in front of a movie or while waiting for midnight.
The aroma that comes out of the oven is pure magic: parmesan, good oil, walnuts, and a pinch of pepper or rosemary (yes, you can add it if you like!). They are yeast-free, so they are made in just a few minutes and you can prepare them even at the last minute. And if you want to make them even more beautiful to give as gifts, just put them in a transparent bag with a red ribbon: a lovely idea for Christmas food gifts!
You only need a few ingredients: flour, grated parmesan, chopped walnuts, extra virgin olive oil, a pinch of salt, and enough water to form the dough. Shape the taralli, bake them, and in less than half an hour you have crunchy and tasty snacks to serve hot or cold.
I love them just warm, when you can still smell all the cheese fragrance. If you want a stronger taste, add a pinch of black pepper or sweet paprika: they completely change character and become perfect even for an aperitif among friends.
In short, if you’re looking for a tasty and quick snack to surprise everyone during the holidays or just to accompany a good glass of wine, these parmesan and walnut taralli are the right choice: easy, genuine, and with that rustic flavor that feels like home and togetherness. Trust me, one leads to another… and I always end up making double!

FAQ PARMESAN and WALNUT TARALLI
Can I replace walnuts with other nuts?
Of course! Almonds, hazelnuts, or even pistachios: just make sure to toast them first to enhance the flavor.
Can I make them without parmesan?
Yes, but they will lose some of their character. You can use a grated aged cheese or a lactose-free version instead.
How do I serve them for an aperitif?
With olives, cold cuts, and a glass of chilled prosecco! But they are also great alongside a cheese cream or hummus for dipping.
Can you make parmesan and walnut taralli without oil?
Absolutely! They will be crunchier and, of course, very light.
