Inside there’s lots of grated Parmesan, outside they’re soft and fragrant, ready in just a few minutes.
This recipe for savory parmesan graffe is super easy, doesn’t require long times and is perfect even at the last minute. You can fry them as traditional, or bake them in the oven or cook them in an air fryer for a lighter version without losing flavor. Excellent served hot, but also very good lukewarm, they’re one of those ideas to save for parties, aperitifs, Carnival or when you want a snack different from the usual.

Ingredients
- 2 cups flour (the flour you usually use)
- 1 egg
- 2 tbsp extra virgin olive oil
- 3 tbsp + 1 tsp water
- 1 tsp instant baking powder (for savory recipes)
- 2 tbsp grated Parmesan
Steps
Pour the flour into a bowl, add the baking powder, the salt, the egg, the Parmesan and mix; add the water a little at a time while you continue to stir.
Knead well, move to a floured work surface and work the dough a little to make it smooth and homogeneous; if needed dust with flour — it should not be sticky.
Divide the dough into 6 pieces, shape into small ropes and close by overlapping the two ends.
Bake in the oven at 356°F for about 12-15 minutes or in the air fryer at 374°F for 8 minutes, turning them halfway, or fry in hot oil.
