While preparing my parmesan twists, I realized they work perfectly for any dietary style because you can adapt them as you like: already prepared vegetarian version (hello Parmesan!), you can make them lactose-free using aged lactose-free cheese, you can make them gluten-free using gluten-free flour or a gluten-free pastry roll.

Ingredients
- 1 1/3 cups flour (the one you usually use)
- 1/3 cup water
- 2 tbsps extra virgin olive oil
- Half teaspoon salt
- 1/4 cup grated Parmesan
- dried oregano
Steps
Pour the flour into a bowl, add the salt, grated Parmesan, water, and oil, then mix and knead well.
Divide the dough into pieces, 20-25, make small rolls and flatten them with a rolling pin.
Sprinkle with oregano and Parmesan, then place them on the baking sheet, oil and bake at 356°F for 10-25 minutes, or in an air fryer at 392°F for 5-6 minutes, flipping them.

Quick tips for perfect twists
Cut the pastry with a pizza cutter: it’s faster and looks nicer.
Add Parmesan on the pastry as well, so they’re much tastier.
In an air fryer: 356°F for 6-7 minutes and voila, as crispy as chips.
In the oven: 374°F fan-forced for about 12 minutes.
Want a “wow” touch? Brush with egg or milk (even plant-based) for a more golden color.

Yes, you can make them and keep them raw in the fridge for a few hours, or you can cook them and heat them for 2 minutes in an air fryer.

Of course! Pecorino, Grana, mixed cheeses… each choice brings a different character to the twists.

Better not, the pastry tends not to be as crispy as it should be.
