Today I needed to prepare a simple yet tasty first course and I just had a couple of eggplants in the fridge to use up. Little time available and a big hunger, so I decided to cook a pasta with eggplants and bacon: a quick and flavorful idea, perfect for when you are in a hurry.

I diced the eggplants, sautéed them in a pan with oil and garlic, then added the crispy smoked bacon. It all turned into a fantastic sauce for short pasta like penne or fusilli. It’s a really tasty lunch-saving recipe, which you can also personalize with fresh cherry tomatoes, chili pepper, or a sprinkle of Parmesan cheese.

An alternative to the classic pasta with eggplants, made even more flavorful with bacon. A great idea also for a quick dinner or to take to the office.

Ingredients

  • 2 black oval eggplants
  • 5.64 oz sweet bacon
  • 5.64 oz smooth penne
  • 2 tablespoons grated Parmesan cheese

Steps

  • Sauté the bacon in a pan and set aside.

  • Dice the eggplants and cook them in a pan with a drizzle of oil then add the bacon and cook for a few minutes.

  • Meanwhile, cook the pasta and add a few tablespoons of pasta cooking water to the eggplants.

  • Drain the pasta al dente and mix it with the sauce, stir well, plate and serve with a sprinkle of Parmesan.
