Pinguino Cake with Pan di Stelle Biscuits

Ingredients

  • 14 oz cocoa cookies
  • 5 tbsp butter
  • 2 cups whipping cream, 35% fat
  • 7 oz condensed milk
  • 3.5 oz chocolate
  • 3.5 tbsp milk

Preparation

  • Crush 150 g of cookies with the butter and place them in a 7-8 inch pan and compact well.

  • Whip the cream with the condensed milk and make a layer on the base then make a layer of whole cookies and arrange the cookies all around.

  • Fill with cream then with cookies until you finish the ingredients and put in the freezer.

  • Melt the chocolate with milk or cream in a bain-marie and let it cool.

  • Remove the cake from the freezer and cover with chocolate, then put back in the freezer for an hour.
