PINWHEELS with chocolate mousse, easy and quick BISCUIT ROLLS, super soft breakfast or snack desserts, roll filled without cream.
Very simple to prepare, the pinwheels with chocolate mousse without cream are delicious, perfect even for children, for birthday parties and buffets, they are obviously not light because there is sugar but they are not excessively sweet or caloric.
The idea for the pinwheels with chocolate mousse recipe is taken from a recipe book, I modified it using my basic recipe which I wouldn’t change for any other, much lighter than the one indicated in the book, there were too many egg yolks. For the mousse, I also reduced the sugar and yolk quantities.
They were excellent!

Ingredients
- 3 eggs
- 3/4 cup all-purpose flour
- 7 tbsp sugar
- 1 tsp vanillin
- 4.4 oz chocolate
- 1 tsp milk (or oil)
- 1.5 tbsp sugar
- 3 egg yolks
- 2 egg whites
Steps
Melt the chocolate with the oil or milk in a bain-marie, add the yolks one at a time, mix, as soon as everything is combined, turn off the heat and let it cool.
Whip the egg whites and incorporate them into the chocolate, take the mousse and put it in the fridge until ready to use.
Preheat the oven to 392°F
Beat the eggs with the sugar until frothy, then add the flour with the sifted vanillin, a little at a time.
Pour the mixture onto a 10 x 14 inch baking tray lined with parchment paper, level it well, and bake for 7 minutes.
Remove from the oven, turn the roll onto a damp cloth and roll it up immediately, let it rest and cool.
As soon as it is cool, fill with the mousse, roll it up and put it in the fridge for a couple of hours or in the freezer for 30 minutes if you are in a hurry and need to serve it soon.
Cut it into slices 1.5-2 inches thick and serve.
