This pistachio caprese is a real treat, a variation of the typical cake with chocolate and almonds with a double chocolate filling, white and dark.
A delicious cake that stays moist and melts in your mouth, the pistachio and chocolate caprese cake is easy to prepare and very good, perfect to serve after lunch or dinner, it is a true pleasure to eat.
For those who don’t love chocolate, you can always opt for the lemon or orange versions, which are just as delicious as the dark chocolate ones.
Of course, this is a decidedly caloric dessert, but a slice is definitely worth it, it was very much enjoyed.

Ingredients
- 1 1/2 cups pistachio flour
- 1.8 oz white chocolate
- 1.8 oz 60% dark chocolate
- 1/2 cup sugar
- 4 tbsp butter
- 2 eggs
- 1/4 cup chopped pistachios
Steps
Melt the chocolate in a double boiler with the butter.
Place the pistachio flour in a bowl, add the chocolate, egg yolks, and sugar, and mix.
Whisk the egg whites and fold them into the mixture by hand, then pour everything into a pan lined with parchment paper and bake in a preheated oven at 356°F (180°C) for 20-25 minutes. The cake should remain moist.
