Simple and delicious, the pistachio shortbread can be considered quick stuffed pastries to prepare, also perfect for gifting, they are ready in a few minutes and are very tasty.
The pistachio shortbread recipe is perfect if you’re looking for pastries to gift for the upcoming holiday season or a simple dessert to enjoy comfortably at breakfast or after dinner.
Of course, you must like pistachios; I don’t use them often, but I really enjoy them for filling small pastries.

Ingredients
- 1 2/3 cups All-purpose flour
- 1/3 cup Butter
- 2 tsp Extra virgin olive oil
- 1 Egg
- 1/3 cup Sugar
- 1 1/2 tsp Baking powder
- 1/8 cup Pistachios (or granules)
- as needed Pistachio paste
Preparation
Pour the pistachios into a mixer and grind them into a flour.
Put it in the food processor or a bowl if working by hand and add the flour with the baking powder, butter, sugar, and egg.
Knead and add the oil if necessary.
Work the dough well so it does not crumble but remains soft and workable.
Roll it out on a floured surface and cut it with a 2-inch round cookie cutter or a glass, which is about 2.75 inches in diameter.
Fill with pistachio paste and close with a shortbread disk, seal the edges well with a pastry wheel or a fork.
Place the cookies on a baking sheet lined with parchment paper, dust with powdered sugar and bake in a preheated oven at 350°F for 15 minutes.
