Ingredients

  • 4 oz ham (raw or cooked)
  • 3.5 oz grated parmesan
  • 3.5 oz provola (fiordilatte, scamorza)
  • 2 cups all-purpose flour
  • 2/3 cup water
  • 1 tsp salt
  • 1 tsp fresh yeast

Steps

  • Pour the flour into a bowl, add the crumbled yeast and water, start kneading then add the salt and knead well.

  • Cover the dough and let it rest for an hour, then take it, make a sort of rectangle without using the rolling pin, bring the short side towards the center and cover with the other short side.

  • Make a ball and let it rest until doubled, about 3 hours.

  • Once risen, take the dough, roll it out and form a rectangle, then divide it into 10 pieces.

  • Roll out the pieces to widen the rectangles, fill them with a slice of speck, a sprinkle of parmesan, and bits of provola.

  • Seal by pinching the edges, place them on the baking tray or in the air fryer, brush with oil, bake at 375°F for about 10 minutes, if using the air fryer, turn them after 5 minutes.
