POTATO AND BACON SOUFFLE, individual cakes, an easy and quick appetizer recipe, perfect for parties, great for both lunch and dinner.
The potato soufflés are very soft and truly delicious, and they can be made quickly with boiled or raw potatoes if you don’t have time to cook them beforehand, and they are enriched with diced sweet pancetta, provola, and bacon.
Great as an appetizer or for a fancy dinner, the potato soufflés are a pleasure to eat and are also enjoyed by kids; of course, you can make them with ham if you don’t like pancetta, or add other types of cheese.
They are very fluffy thanks to the egg white and really appetizing wrapped in a delicious crispy bacon crust.

Ingredients
- 12 oz potatoes
- 1 egg white
- 1 tsp butter (optional)
- 1 oz sweet pancetta
- 6 slices bacon
- 1 tbsp grated Parmesan cheese (omitted)
- 1 pinch pepper
- 1 pinch salt
- 2 tbsp milk (omitted)
- 2.5 oz provola
Steps
In the recipe, I omitted butter due to the presence of pancetta; if you change the cured meat, add it at your discretion.
Parmesan is, of course, optional as is pepper; I removed them for intolerance reasons.
Wash the potatoes well and boil them, then mash them with a potato masher and collect the puree in a bowl.
If needed, add a bit of milk, combine the egg white, diced pancetta, provola, Parmesan, pepper, and salt, and mix well.
The egg white should be whipped, but I added it as is and worked the mixture well with a spoon.
Place two slices of bacon in a cross inside the molds and pour the mixture, close with the bacon, sprinkle with breadcrumbs, and at this point, you could also oil if you prefer.
Bake in a preheated oven at 350°F for 15 minutes or in the air fryer at 340°F for 12 minutes.
Unmold, invert onto the serving plate, remove the aluminum mold, and serve.
