Ingredients
- 11 oz potatoes
- 3 eggs
- 2 slices speck
- 2 oz fiordilatte (fresh mozzarella)
Steps
Grate the potatoes using a coarse grater, line a muffin tin with parchment paper and fill with the potatoes.
Boil two eggs, beat one egg with a fork and pour it into the baskets — it acts as a binder.
Bake for about 15 minutes at 392°F, then remove from the oven.
Fill with speck, pieces of fiordilatte and the hard-boiled eggs cut into pieces, or cut them in half and drizzle with a little oil if you prefer.
You can return them to the oven for a few minutes if you want to melt the fiordilatte.
