Ingredients
- 1 lb potatoes
- 7 oz green beans
- 10 oz chicken (or turkey)
- 3/4 cup cherry tomatoes
- 1/2 cup carrots
- to taste arugula
Steps
Peel the potatoes and cut them into not-too-large chunks.
Place them in a pot with water, clean the green beans, add them to the potatoes, and boil everything for about 15 minutes.
Cut the chicken or turkey breast into pieces and cook in a pan as you prefer, with or without oil, seasoned with pepper or spices to taste.
Cut the cherry tomatoes and place them in a large bowl, add the sliced carrots, the chicken, then the well-drained potatoes and green beans.
Season with oil, salt, oregano, and add the arugula, mix well and serve.
