A simple recipe that I really liked and have proposed in different ways, potato crostini are a delicious Christmas appetizer that will amaze everyone.
I will also prepare them, probably in advance, because unfortunately I never have enough time; I freeze them so I can defrost and reheat them for the occasion.

Ingredients
- 9 oz Potatoes
- 3 slices Cooked Ham
- 9 slices Cheese Slices
- 9 Black Olives
Preparation
Wash the potatoes thoroughly to remove any dirt, then peel and cut them into chunks.
Boil them in lightly salted water for about 10 minutes after the water starts boiling.
Drain them well and mash with a potato masher.
Gather the puree in a bowl, salt and pepper to taste, and mix well.
Take about a tablespoon of puree, form a ball, then flatten it in the palm of your hand, place it on a cutting board and cut it with a 2-inch star-shaped cutter.
You’ll get about 9; dip them first in beaten egg on a plate, then in breadcrumbs, and place them on a baking sheet lined with parchment paper.
Drizzle with oil and bake in a preheated oven at 356°F for about 10 minutes.
Have the ham cut a little thicker and cut it with the star cutter, do the same with the cheese slices.
Remove the stars from the oven, garnish with a cheese slice and ham, return to the hot oven for a few minutes if serving immediately.
Pit the olives, crumble them with your hands, and decorate the stars.
