I had some boiled potatoes to use up and little time to improvise dinner… As often happens, my son informed me at the last minute that 4 friends would be staying for dinner. Little time but lots of boiled potatoes ready in the fridge: so off we go! I immediately thought of a potato flatbread without flour, quick to prepare, perfect as a main dish, tasty dinner, or even as finger food if cut into wedges!
The texture is irresistible: crispy on the outside, soft on the inside, thanks only to the potatoes, a drizzle of oil, and a bit of grated cheese. No yeast, no dough to wait for, gluten-free, ready in less than 20 minutes!
It’s one of those leftover boiled potato recipes that save your evening and even make you look good. Want to make it even more indulgent? Try it with speck, onion, zucchini, provolone or whatever you have in the fridge. I often serve it as a rustic appetizer, or cut into squares at buffets.

Ingredients
- 1.1 lbs potatoes
- 1 egg
- 2 tablespoons grated parmesan cheese
- 1 pinch salt
Steps
Boil the potatoes with their skins on, then peel and mash them well while they’re still hot.
Let cool slightly and add egg, cheese, and salt.
Line the baking sheet with parchment paper, oil it, and spread the mixture with a spoon to form a very thin, uniform layer, about 1/8 inch thick.
Bake at 392°F for 25-30 minutes, until golden brown.
