The recipe for potato mini pizzas is very simple, you prepare the classic dough with flour, water, yeast, and salt then once risen, divide it into pieces and top with potatoes and provolone cheese.

They can be enriched with other ingredients such as ham, speck, salami, or olives or tuna, according to your tastes or needs, you can prepare many different mini pizzas.

POTATO PIZZETTES for buffet

  • 2 cups all-purpose flour
  • 2 cups cake flour
  • 1.5 cups water
  • 1/2 teaspoon salt
  • 1 tsp fresh yeast
  • 7 oz provolone cheese

Steps

  • Dissolve the yeast in water, pour the flour into the bowl, add the yeast, mix, add salt and knead well.

  • The dough is sticky, place it in the bowl, cover with plastic wrap and let it rest until doubled, about 3 hours.

  • Once risen, take the dough and divide it into 15-20 pieces.

  • Roll them out and place the mini pizzas on the baking tray, oil, bake at 390°F and cook for 5 minutes.

  • Peel and slice the potatoes with a peeler, remove the mini pizzas from the oven and top them with potatoes and provolone cheese, put back in the oven and cook for another 5 minutes.
