Ingredients

  • 3 eggs
  • 3/4 cup all-purpose flour
  • 1/2 cup sugar
  • 1 teaspoon baking powder
  • 3 1/2 tablespoons corn oil
  • 1/4 cup milk
  • 1/2 cup mascarpone cheese
  • 1 egg
  • 15 amaretti cookies
  • 1 apple
  • 1/7 cup pine nuts
  • 1 tablespoon sugar

Preparation

  • Butter and flour a 8-inch cake pan, preheat the oven to 350°F

  • Beat the eggs with the sugar until frothy, then add the oil and milk.

  • Reduce the speed of the mixer to low and add the flour with the baking powder.

  • Pour half of the mixture into the cake pan and bake for 10 minutes.

  • Prepare the filling, pour the mascarpone into a bowl, add the egg and roughly crushed amaretti.

  • Peel and chop an apple into small pieces and add to the mixture, mix well.

  • Remove the cake pan from the oven, pour the filling and level it gently.

  • Cover with the other half of the batter and bake for about 30 minutes, do the toothpick test.

  • Remove from oven and let cool before cutting.
