Ingredients

  • 1 Puff Pastry (rectangular)
  • 1 apple
  • 1.05 oz Raisins
  • 1/2 cup Milk
  • 1.05 oz Sugar
  • 2 tbsp All-purpose flour
  • 1 egg yolk

Preparation

  • Soak the raisins in a bowl with water and rum.

  • Prepare the custard, put the egg yolk in a small saucepan with the sugar and work with a hand whisk.

  • Heat the milk with the lemon zest and pour it over the egg yolk, always mixing with the whisks.

  • Add the flour a little at a time, always mixing.

  • Work until the custard thickens in about 5 minutes, then pour it into a bowl and cover it with cling film in contact and put it in the fridge.

  • When the custard has cooled a bit, preheat the oven to 390°F, cut the puff pastry into 4 rectangles.

  • Drain the raisins and pat them dry with paper towels.

  • Cut the rectangles into strips about 3/4 inch wide, you will have one or two strips left over for each cannoli so you will manage to make 5 in total.

  • Wrap the strips around metal cannoli molds overlapping the strips set them diagonally, a bit across.

  • Place the cannoli on a baking tray lined with parchment paper and bake for about 20 minutes.

  • Remove from the oven, let them cool and in the meantime mix the raisins with the custard, peel the apple, cut it into small pieces and add them.

  • Fill the cannoli with the help of a teaspoon then dust with powdered sugar.
