I needed something tasty and quick for an aperitif with friends and I thought of making a puff pastry flatbread with speck and arugula. It is a simple and quick recipe that I always prepare when I want a crispy snack without making too much mess in the kitchen.

You start with ready-made puff pastry: just roll it out, fill it with speck and a handful of fresh arugula, fold it over and bake. In a few minutes, you have a crispy arugula flatbread that’s golden and aromatic to everyone’s delight.

And if you need a vegetarian version, replace the speck with spreadable cheese or sautéed mushrooms: the vegetarian puff pastry flatbread is very easy to make, yet remains super elegant to serve.

I also love it as an appetizer when I have guests: you can add grilled zucchini or cherry tomatoes to make it richer. And I can’t tell you how good it is cold: it’s perfect as a quick savory snack to take to the office or for a picnic.

Ingredients

  • 1 puff pastry
  • 3.5 oz speck
  • 3.5 oz provola cheese
  • arugula

Steps

  • Place the puff pastry on the work surface.

  • Fill with slices of speck, provola, and arugula then fold the other half of the puff pastry over the filling, seal the edges, prick with a fork and cook.

  • Cook in an air fryer at 347°F for 15 minutes, turning it, or in an oven at 356°F for about 20-25 minutes.
