A simple and quick idea to get rid of some leftover vegetables and cold cuts from the holidays, all you need is a roll of puff pastry, and in no time, you will prepare puff pastry mini pizzas that everyone will surely love.
We are still in the holiday season, and today you surely have some leftovers. The filled puff pastry mini pizzas are a great fallback; they can be filled with anything: sausages and broccoli rabe, escarole, ham, mortadella, or simply with mozzarella and tomato.
If you don’t have puff pastry, just make a simple dough with water and flour, which can be prepared in a few minutes even by hand, roll it out, cut it, and fill it.

- mortadella with pistachios

- 3 oz provolone
Steps
The recipe uses leftover vegetables that are already cooked. Of course, if you have time, wash the vegetables and cook them.
Place the puff pastry on the work surface and cut it with a 3-inch cookie cutter or a glass.
Fill with leftover cold cuts, I used salami and mortadella, vegetables, I had already cooked broccoli rabe, and provolone pieces.
Pair the pastry circles and seal the edges, place them on the oven tray or air fryer, and cook at 356°F for about 12 minutes.
