Ingredients

  • 2 puff pastry
  • 5.3 oz speck
  • 3.5 oz smoked scamorza
  • as needed egg yolk

Preparation

  • Remove the pastry sheets from the fridge at least 10 minutes before using and roll them out on the work surface.

  • Stuff a pastry sheet with slices of speck, you can obviously use more if you prefer, and you can cut the speck into pieces.

  • Slice the scamorza and arrange it on the speck then close with the other pastry sheet, flatten a bit with your hands and pierce with a fork.

  • With a knife, mark a grid of 5 by 10 squares without separating them, leave them like a quilt.

  • Brush with the egg yolk, bake in a preheated oven at 392°F and cook for 10-12 minutes.
