Of course, you can eliminate any ingredient you don’t like or substitute the ricotta with another spreadable cheese like robiola, stracchino, or Philadelphia.

Ingredients
- 2 puff pastry sheets
- 3.5 oz smoked salmon
- 5 oz smoked provola
- 1.5 oz chopped pistachios
- 1 cup ricotta cheese
Steps
Remove the pastry sheets from the fridge 10 minutes before using them, then place them on the work surface and prick them with a fork.
Spread one sheet with ricotta, add salmon slices, more ricotta, then provola, and the chopped pistachios. If desired, you can use pistachio flour.
Close with the other pastry sheet, seal the edges, prick the sheet with a fork and draw a grid with a knife, without cutting through, like a quilt in the size you prefer.
Brush with an egg yolk, bake in a preheated oven at 400°F for about 15 minutes.
