I prepare the puff pastry spirals every time I want to bring something beautiful, good, and stress-free to the table.
The puff pastry does all the work, I just add a creamy layer of ricotta and blended olives and a ready-made pepper pesto. Roll, cut, bake… end of the effort.
They are perfect as a Christmas appetizer, for a holiday aperitif, for a buffet or to be served even warm when guests arrive unexpectedly. They always disappear in five minutes, guaranteed.

Ingredients
- 1 sheet puff pastry
- 10 green olives
- Half tablespoon extra virgin olive oil
- 2 tablespoons ricotta
- Half bell pepper
- 50 g ricotta
- chili pepper
- 1 tablespoon extra virgin olive oil
- 1 tablespoon grated parmesan
- 1 pinch salt
Steps
Place the pitted olives in a bowl with 2 tablespoons of ricotta and blend everything, add a drizzle of oil, salt, and mix.
For the recipe, I used ready-made pepper pesto but you can make it at home: cook the bell pepper a little or use it raw and blend it with the ricotta, chili pepper, oil, and parmesan.
Add a bit of salt and mix.
Roll out the puff pastry and divide it into 5 rectangles lengthwise, you should get 5 strips, fill 2 strips with pepper pesto and 2 strips with olives.
Pair them by overlapping the pepper strips on the olive ones then cut them in half and roll, cut the rolls in half.
Fill the last strip with both flavors, cut it in half and overlap, roll and cut into two swirls, you obtained 10 swirls, arrange them on the baking tray or in the air fryer.
Bake at 356°F for 10-12 minutes or in the air fryer at 347°F for 4 minutes, flip and cook for another 4 minutes.
