Ingredients
- 3 puff pastry sheets
- 2.11 cups whipping cream
- 2.11 cups milk
- 4 egg yolks
- 0.4 cups sugar
- 0.63 cups all-purpose flour
- 4 tablespoons instant coffee
Steps
Work the egg yolks with the sugar in a saucepan with a hand whisk, add the flour or cornstarch and work with the whisk.
Heat the milk and pour it over the yolks in a thin stream, always mixing with the hand whisk, move to the stove and work in a double boiler until the cream thickens, then remove it from the pan.
Place the cream in a glass or ceramic container then cover it with cling film touching the surface and put in the fridge to cool.
Place the pastry on the lined baking sheet, prick it with a fork, sprinkle with granulated sugar, bake and cook in the preheated oven at 392°F for about 10 minutes.
