The quiche lorraine is very simple, a French cheese and bacon tart really delicious perfect to enjoy at dinner or as an appetizer with a delightful filling that you will surely enjoy.
In my version of quiche lorraine I used ricotta beaten with egg and it was perfect, a creamy dish prepared with a base of flour, butter and cold water, then filled with cream, cheeses and bacon, truly delicious.

Ingredients
- 1 1/4 cups all-purpose flour
- 1/3 cup butter
- 1 tablespoon water (cold)
- 1 pinch salt
- 3/4 cup heavy cream
- 8.8 oz ricotta (or 2.5 oz of Gruyère)
- 4 tablespoons grated Parmesan cheese
- 3.5 oz bacon
- 1 pinch pepper
- 1 pinch salt
Steps
Pour the flour into a bowl, add the cold butter in pieces, a pinch of salt and the water, knead quickly, you can use a food processor.
Make a ball and let it rest in the fridge for 30 minutes.
Work the ricotta or Gruyère, with the cream, salt, pepper, diced bacon, and Parmesan, mix well.
Roll out the dough in a 9-inch tart pan and pour the filling.
Bake at 350°F for about 35-40 minutes.
Remove from oven and let cool before slicing.
