Ingredients

  • 7 oz All-purpose flour
  • 1 tsp Instant yeast for savory dishes
  • 1 tbsp Extra virgin olive oil
  • 3.4 oz Water
  • Half tsp Salt
  • Tomato puree
  • Zucchini
  • Tuna
  • Salmon
  • Onion
  • Potatoes
  • Eggplants (roasted)

Preparation

  • Pour the flour with the yeast into a bowl, add the oil and water.

  • Mix with a spoon as much as you can, then move to a board and work the dough a bit.

  • Cover it with a bowl and let it rest while you prepare the different toppings.

  • If using vegetables like zucchini, grate them with a large-hole grater.

  • A 100 g zucchini (about 3.5 oz) is enough for 10-15 mini pizzas, put them in a pan with a drizzle of oil and sliced shallots, and sauté for a few minutes.

  • They can also be used raw if you like, perfect in summer.

  • For the tomato puree, it’s better to cook it a bit with a drizzle of oil and some oregano.

  • With salmon, potatoes are great, slice them very thinly and sauté in a pan with oregano or rosemary.

  • When the toppings are ready, take the dough and divide it into 30 g (about 1 oz) pieces and spread it with your fingers starting from the center.

  • A bit like making Neapolitan pizza, leave a small crust.

  • Oil a pan and cook the mini pizzas on one side for a few minutes, then flip and cover with a lid.

  • Cook for a few minutes, check the cooking and top with the condiments.
