WILD ASPARAGUS RISOTTO easy first course, quick recipe, good and light main dish to make in no time, idea for lunch or dinner.
Asparagus lends itself to many preparations, it’s a gluten-free recipe, a Sardinian recipe, but I believe it’s made all over Italy; never prepared an asparagus risotto, really excellent!
I really like asparagus, my mother always tells that as a child she used to go with her dad to the mountains still under the moonlight looking for wild asparagus, berries, and many other good things that the Sardinian land had to offer!
Beyond the beauty of the place, the tranquility and the scents of Sardinia I think are truly unique! A risotto with wild asparagus, the Sardinian ones, would certainly have been much more fragrant than mine.
If you’ve never tried an asparagus risotto like this, I recommend doing so, a quick first course, very good! And here we are! another appointment with Italy on the plate! this month flowers, herbs, and berries, nature on the table from all over Italy.

Ingredients
- 1 cup Arborio Rice
- 7 oz Wild Asparagus
- 4 cups Vegetable Broth (or bouillon cube)
- 2 tbsps Butter
- 1 1/2 White Onion
Preparation
Prepare the vegetable broth with a carrot, celery, some Swiss chard leaves and onion or use a bouillon cube.
Clean the asparagus, remove the woody stem and wash them gently.
Chop a part of the tender stem and the onion, place in a pan with a drizzle of oil, the butter and the asparagus tips.
Add a ladle of broth, cook for 5 minutes with a lid, then increase the heat and remove the lid to let the broth evaporate.
Remove the asparagus tips and set aside.
Pour the rice into the pan and cook over low heat, gradually adding the vegetable broth.
Before serving, add the asparagus tips.
