QUICK CARNIVAL FRITTERS
- 1 2/3 cups all-purpose flour
- 1 teaspoon baking powder
- 2 teaspoons butter
- lemon zest
- 1/3 cup milk
- 2 1/2 tablespoons sugar
Tools
For frying, I used my Moulinex AF 200 deep fryer 1 L which I find excellent, small but sufficient for 3-4 people, at most you cook in a couple of rounds but it’s fine.
Place your food in the basket and fry potatoes or vegetables easily, I use it a lot because it’s very convenient and avoids having pans or pots full of boiling oil around children, better to avoid.

QUICK CARNIVAL FRITTERS
You can use a stand mixer or work by hand as I did for such a small dough.
Pour the flour with the yeast and sugar into a bowl.
Add the grated zest of half a lemon, a pinch of vanilla, and diced butter.
Start kneading and gradually add the milk.
The dough should not be too sticky, just slightly.
Dust your hands and divide it into 6 pieces, the fritters will be about 5 inches.
Of course, I calculated the basket of my fryer. You can make them larger using a pan.
Stretch the doughs by hand starting from the center to create a sort of edge.
Heat the oil and fry the fritters one at a time.
Drain on kitchen paper and sprinkle with granulated sugar.
Bon appétit
