Quick Eggless Almond Cake

QUICK ALMOND CAKE, eggless and very easy, a dried fruit dessert to make in few minutes, ideal after lunch or dinner, great for Christmas parties.

Delicious almond cake, an egg-free dessert to make in 10 minutes, everything is mixed together and spread in the pan to bake, it’s delightful.

Obviously if you don’t like almonds, you can opt for another type of dried fruit like hazelnuts or walnuts, but I recommend the almond cake as is.

A recipe inspired by an ancient Neapolitan dessert that includes adding honey to the dough, which I omitted in this case, and candied orange peel, which you can see HERE

Quick eggless almond cake with dried fruit

Ingredients

  • 1 3/4 cups all-purpose flour
  • 2 1/2 oz almonds
  • 1/3 cup sugar
  • 1/4 cup butter
  • 1/2 packet baking powder
  • 1/4 cup almond milk

Preparation

  • Place the almonds in a food processor and coarsely chop, do not reduce to flour.

  • Then place them in a bowl, add the flour sifted with the baking powder, the sugar, and mix again.

  • Add the butter cut into cubes and knead by adding the milk.

  • The dough is firm, so spread it with a spoon, but if it’s soft, that’s not a problem.

  • Place it in a 9-inch pan, it remains low like a caprese, or in an 8-inch pan if you want it higher.

  • Personally, I recommend the larger pan, then bake in a preheated oven at 350°F and cook for about 30 minutes.

  • Always do a toothpick test after 20 minutes.

  • Remove from oven, sprinkle with powdered sugar.
