QUICK INDIVIDUAL TIRAMISU CUPS, delicious recipe with puff pastry and sponge cake with quick coffee cream without cooking.
A very simple dessert to prepare, great to serve after lunch or dinner. For the tiramisu cups, you can prepare coffee if you prefer, but I used instant coffee to speed up the recipe and avoid raw eggs.
The recipe for the tiramisu cups is very simple. The sponge cake is prepared and cooked in a few minutes, as well as the puff pastry. The cream, chilled in my case, is also prepared in minutes.
Of course, you can use moka coffee and egg yolk as in the classic tiramisu cream, but in summer, I sometimes prefer to avoid using raw eggs for tiramisu.

Ingredients
- 1 puff pastry
- 5.3 oz mascarpone
- 0.7 oz instant coffee
- 2 tbsps sugar
- 2 eggs
- 2.1 oz sugar
- 2.8 oz all-purpose flour
- 1 tsp instant coffee
- 1 tsp baking powder
Preparation
Prepare the coffee sponge cake, whip the eggs with the sugar until foamy, then gently fold in the flour with the baking powder.
Pour the mixture into a baking tray lined with parchment paper and create a rectangle about 8 x 10 inches, bake at 390°F for 7 minutes.
Remove from oven, detach the sponge cake from the paper, then cut into 2-inch squares and let cool.
Cut 2.4-inch squares from the puff pastry, prick with a fork and sprinkle with sugar, then bake at 390°F for 7 minutes.
Remove the pastry from the oven and let cool, then mix the mascarpone with the instant coffee and sugar.
Place a puff pastry square on your work surface, spread a layer of cream, add the sponge cake, more cream, and finish with another puff pastry square.
Dust with cocoa powder and refrigerate until ready to serve.
