QUICK LIGHT BAKED CARROTS SIDE DISH, easy and fast vegetable recipe, low-calorie dish made in just a few minutes.
I must say I’ve always preferred raw carrots, but when I tasted the baked carrots, I changed my mind. They are truly excellent, a light and good side dish perfect for accompanying meat or fish.
The recipe for baked carrots is very simple. It takes just a few minutes to prepare, and they cook to your liking; mine were not very cooked because I prefer them crunchier.
A delicious light dish enriched with soy sauce or balsamic vinegar, perfect for both lunch and dinner, and if you’re on a diet, they will be great.

Ingredients
- 2.2 lbs carrots
- oregano
- rosemary
- extra virgin olive oil
- balsamic vinegar (or soy sauce)
Preparation
Wash the carrots well and remove the outer skin with a peeler.
Place them on the baking sheet lined with parchment paper and brush them with oil.
Sprinkle with oregano and rosemary, a bit of soy sauce or balsamic vinegar, and bake in a hot oven at 392°F
Cook for 15-20 minutes or adjust according to your taste, whether you like them softer or crunchier.
Obviously, the longer they cook, the softer they will be.
