Ingredients
- 1 2/3 cups all-purpose flour
- 6.76 fl oz water
- 2 tbsps extra virgin olive oil
- 5.3 oz mortadella with pistachios
- 3.5 oz provola cheese
Steps
Pour the flour into a bowl or mixer, add the oil and water, and knead well.
Work the dough until smooth, then roll it out and form a rectangle of 9.8 x 13.8 inches.
Fill half of the dough with slices of mortadella and provola pieces or slices, then fold the other half over the filling and seal the edges.
Draw a grid of 12 or 15 pieces, bake in a preheated oven at 390°F for 20 minutes.
Remove from the oven and cut the savory pie following the drawn lines.

You can use puff pastry if you prefer or shortcrust pastry and fill it, it’s a great fridge-cleaner, perfect with ham, salami, ricotta, and provola, stracchino or zucchini, eggplants, mushrooms, obviously you can vary with seasonal vegetables.
