The recipe for quick Neapolitan sandwiches is very simple, using all the typical sandwich ingredients but with a different leavening agent; instead of yeast, instant yeast is used, and they turn out very well.

Ingredients
- 1 3/4 cups all-purpose flour
- 1 teaspoon instant yeast for savory preparations
- 2 tablespoons lard (or extra virgin olive oil)
- 1/2 cup water
- 1 egg
- 1 oz Neapolitan salami
- 1 oz cooked ham
- 1 oz speck
- 2 tablespoons grated Parmesan cheese
- 2 oz provolone cheese
- to taste pepper
- 1/2 teaspoon salt
Steps
Pour the flour with the yeast into a bowl or mixer, add the water, pepper, salt, and the lard or oil, and mix well.
Roll out the dough on a floured surface and create a rectangle of approximately 10 inches x 8 inches.
Fill with chopped or diced cold cuts, crumbled hard-boiled egg, Parmesan, and provolone pieces.
Roll it up and cut into 8 pieces, place them on a baking sheet lined with parchment paper, brush with an egg yolk, bake in a hot oven at 392°F for about 15 minutes.
