As much as I love pizza, I don’t always have time to prepare the dough in advance, so today I made this quick no yeast pizza with mozzarella and tomato, it was perfect for dinner.
The recipe for quick no yeast pizza is very simple, you mix the flour with water, oil, and salt, then spread everything on a baking sheet and dress with tomato sauce and mozzarella or provolone, various cold cuts or with potatoes, as you prefer, it cooks in about 20 minutes and is very tasty.
If you prefer it very crispy, just roll it out to a height of 1/8 inch; if you like it softer, use a smaller tray and leave the dough a bit thicker.

Ingredients
- 2 3/4 cups all-purpose flour
- 1/3 cup extra virgin olive oil
- 7 oz water
- 1/2 tsp salt
- tomato sauce
- 3 oz mozzarella (or provolone)
Steps
Pour the flour into a bowl, add the oil, some water, and the salt, start mixing with a spoon, gradually adding the rest of the water.
Knead the dough a little on the pastry board.
Place a sheet of parchment paper on a baking tray, oil it, pour the dough, oil it, and spread it out quite thinly; it will be a bit sticky.
Dress with the tomato sauce and pieces of mozzarella, a drizzle of oil, and bake.
Bake in a preheated oven at 390°F for about 20 minutes.
